Roasted Eggplant

PREHEAT OVEN TO 350°F | COOK TIME 1HR 30 MIN | PREP TIME 30 HOUR | MAKES 6 SERVINGS

Ingredients

  • 1 medium Eggplant
  • 5 leaves of Kale
  • 1 c cremini mushrooms
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp garlic powder
  • ½ tsp Italian seasoning
  • ¼ tsp ground pepper

Directions

  1. Preheat oven to 350°F
  2. Cube eggplant into ½” pieces
  3. Thinly slice mushrooms and break kale into bite-size pieces
  4. Mix chopped vegetables, seasoning, oil, and vinegar in a large bowl.
  5. Once vegetables are evenly coated, spread evenly on a baking sheet
  6. Bake for 45 minutes and then turn over
  7. Bake for another 45 minutes or until eggplant is soft
