Balsamic Pasta


Fun fact: this recipe was created by Danae because she was broke and needed a few meals out of minimal ingredients. What did I have? Balsamic vinegar, a few grape tomatoes, ground beef, a few sprigs of asparagus, and spaghetti noodles. Not to mention at the time I bough garlic at Costco so I was never out of that! I liked the recipe so much I did it again when I had money and was able to add those fancy things like onion and bread crumbs.

This is in order of time, so if you start with the meatballs and just work through, you’re food should be warn and ready all at once.

Meatball Ingredients

  • 1 lb ground beef
  • 1 clove minced garlic
  • 1/2 medium onion
  • 1 egg
  • *1 piece bread (crumbled)
  • 1/2 tbsp dried basil
  • 1/2-3/4 tbsp oregano
  • 1/2 tsp ground pepper
  • 1/4 tsp salt
  • Splash balsamic vinegar
*we used gluten-free bread. Even if you’re not allergic I highly recommend using tapioca or rice bread because it crumbles nicely


Meatball Directions

Mix all ingredient together in a bowl. Note: it can be helpful to whisk the egg before adding it to the mixture. Roll meat into 1-1 1/2 inch balls and space evenly on a baking sheet. Bake at 375 for 20 mins or until browned.
Pan directions: heat 2 tablespoons oil and place a few meatballs in the pan. Turn regularly to brown all sides evenly. NOTE: this method is nice for spaghetti, because you can add it to the sauce and cook it the rest of the way after browning.

Roasted Vegetables

  • Tomatoes
  • Asparagus
  • 2 tbsp olive oil
  • Salt & Pepper

Vegetable Directions

Preheat oven to 400*. Rinse vegetables and snap the tough ends off the asparagus. Toss in oil and lay evenly on a baking sheet. Salt and pepper to taste. Place in over at 400 for 15-20 minutes. The tomato skin should start to wrinkle and burst, but not darken.
*you can roast with the meatballs at 375 for 25mins.


Balsamic Pasta

  • *Spaghetti or Linguini Noodles
  • 1 clove minced garlic
  • 1 tsp molasses
  • 2 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • Parmesan
*we used Tinkyada Pasta Joy brown rice spaghetti noodles

Pasta Directions

Cook pasta as directed. Strain and set aside.
Sauté garlic in olive oil at a medium heat. Once garlic softens, add balsamic vinegar and molasses. Keep on a medium/low heat and stir continually to keep from burning until it starts to thicken. Remove from heat. Toss pasta in sauce until it is evenly coated and remove (if you do not remove, your noodles will absorb too much balsamic and will taste vinegary).
Add roasted vegetables and meatballs. Sprinkle grated parmesan and enjoy!
